Andrea Furlan

Andrea Furlan is a researcher and co-author of a field experiment on ritual-based redesign of a restaurant routine.
Who they are
Furlan co-wrote the field experiment with Claudia Cozzio. The team observed a restaurant's welcome entree routine and then redesigned it as a ritual, using a mixed methods design in a working restaurant.
The study reports more shared understanding of the routine's purpose among employees, less variability in how long it took, greater group cohesion among staff and greater enjoyment among diners. The article on food rituals uses the study as preliminary evidence from the field.
