Saskia Buse

Saskia Buse is first author, with Stephan Meyerding, of a 2025 paper in the Journal of Agriculture and Food Research on how packaging colour affects choice and health perception for chickpeas and ravioli in Germany. In its image query, respondents saw a black can as high quality and expensive, and silver and black cans as less healthy.

Who they are

Buse is credited as first author of the 2025 paper. The repository record that was read lists no biographical detail, and none was verified elsewhere, so this page does not state her institution or career.

Key ideas

The paper reports two choice experiments with 222 participants aged 19 to 35 in Germany. They tested packaging colour, label, price and origin for a healthy food, chickpeas, and an unhealthy one, ravioli. An image query then measured health associations with six chickpea can colours: green, red, light blue, beige, silver and black.

The results bear directly on black packaging. Respondents perceived the black can as high quality and expensive. Silver and black were seen as indicators of quality, but they could also make the product look less healthy. Green raised perceived healthiness and was tied to sustainability, red did not convey health value, light blue was linked with artificial additives, and beige slightly improved health perception.

Colour was a small input to choice. Price had a relative importance of 42.88 per cent for chickpeas and 40.43 per cent for ravioli, and packaging colour 9.5 and 8.6 per cent. The paper therefore supports two statements together: black reads as premium, and the colour of the pack changes what shoppers conclude more than it changes what they choose.
