A taste of Kandinsky: assessing the influence of the artistic visual presentation of food on the dining experience
Michel, Velasco, Gatti and Spence tested whether arranging a salad in an art-inspired way changes diners' expectations and experience. Participants were served the same salad in one of three presentations: a simple tossed plate, a layout resembling a Kandinsky painting, or a neat arrangement that was not artistic, and completed questionnaires before and after eating. Before tasting, the painting-style plate was seen as more artistic and complex, was liked more than the other two and was valued more highly. After eating, it also received higher tastiness ratings. The authors conclude that attractive presentation can improve the dining experience, particularly the perceived flavour. Journal of record: Flavour 3, article 7, 2014.
